Description

Tasting: Pleasant aromas of ripe fruit reminiscent of ripe cherries and plums

収穫から醸造まで自然な方法で造られています。余計なものは足さず、ノン・フィルターで澱引きもしていないため、ブドウ本来の美味しさが味わえます。

醸造方法：収穫されたブドウは除梗後、15℃で数時間マセラシオンを行います。18-24℃に温度管理されたタンクにて15日間発酵させ、マロラクティック発酵はステンレスタンクにて1ヶ月間。熟成は600Ｌのフレンチオーク（50％は新樽、25％は2年目の樽、25％は3年目の樽を使用）にて12ヶ月間行います。最低6ヶ月間瓶内熟成。

ペアリング：赤身肉のグリル、ジビエを含む肉料理全般、熟成タイプのチーズ

ペアリング：赤身肉料理やうずらなどのジビエ料理、パルミジャーノやペコリーノなどの熟成したチーズ、食後酒としても最適。
